Johannes Dam & Søn
Since 1924, which is the year where the paternal grandfather of the current master baker baked the first classic rye biscuits, Johannes Dam & Søn, Aakirkeby has been producing them. Ever since, the recipe has been kept as a family secret, and it is now the fifth generation in the bakery, master baker Jesper Dam, who is the head of the production.
To this very day, there is a lot of handwork contained in the production, and thus two biscuits will never be 100 % identical. The rye biscuits are extremely crunchy as every single biscuit is composed of 27 thin layers.
Today, five different variants of biscuits are produced.
